We use the 'LONG-TERM' (almost a year) Martinotti method. First a muscat must base is clarified and filtered. Then it is put into hermetic tanks with yeasts for fermentation that is later stopped by refrigeration, resulting in a minimum alcohol content of 6.5 degrees. In the final stage of fermentation the tank is closed under pressure to release CO2 into the wine. The sparkling process, aka ‘presa di spuma’, lasts almost a year, in which almost 6 months special stirrers batonnage the wine once a week, holding the lees in suspension for the maximum wine-yeast contact. Refrigeration and stabilization are followed by sterile filtration and isobaric bottle
